Ingredients:
For the Veal Meatballs:
- 1 pound ground veal
- 1/2 cup breadcrumbs
- 1/4 cup grated pecorino cheese
- 2 cloves garlic, minced
- 1/4 cup chopped fresh rocket (arugula)
- 1/4 cup chopped sun-dried tomatoes (in oil, drained and chopped)
- 1 large egg
- Salt and black pepper to taste
- Olive oil for cooking
For the Tomato, Celery, and Black Olive Sauce:
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 celery stalks, finely chopped
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 1/2 cup black olives, sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and black pepper to taste
- Fresh basil for garnish
Instructions:
1. Make the Veal Meatballs:
- In a large mixing bowl, combine ground veal, breadcrumbs, pecorino cheese, minced garlic, chopped rocket, chopped sun-dried tomatoes, egg, salt, and black pepper.
- Mix the ingredients until well combined. Shape the mixture into meatballs, about 1.5 inches in diameter.
- In a large skillet, heat olive oil over medium heat. Add the veal meatballs and cook until browned on all sides and cooked through. Remove the meatballs from the skillet and set them aside.
2. Prepare the Tomato, Celery, and Black Olive Sauce:
- In the same skillet, add olive oil. Sauté the chopped onion and celery until softened.
- Add minced garlic and cook for an additional minute until fragrant.
- Pour in the crushed tomatoes, sliced black olives, dried oregano, dried basil, salt, and black pepper. Stir to combine.
- Bring the sauce to a simmer and let it cook for about 15-20 minutes, allowing the flavors to meld and the sauce to thicken slightly.
3. Combine and Finish:
- Gently place the cooked veal meatballs into the simmering tomato sauce.
- Allow the meatballs to stew in the sauce for an additional 10-15 minutes, ensuring they are heated through.
- Taste and adjust the seasoning as needed.
- Serve the veal meatballs and sauce over your preferred pasta or with crusty bread. Garnish with fresh basil.
