Ingredients:
- 1 pound spaghetti
- 1 pound spareribs
- 1/2 pound homemade sausage, crumbled
- 1/2 pound ground beef
- 1/2 pound ground pork for meatballs
- Meatball ingredients (breadcrumbs, egg, herbs, etc.)
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 carrot, finely chopped
- 1 celery stalk, finely chopped
- 1 can (28 ounces) crushed tomatoes
- 1 can (14 ounces) diced tomatoes
- 1/2 cup red wine (optional)
- 1/4 cup tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Olive oil for cooking
- Grated Parmesan cheese for serving
Instructions:
- In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped onions, garlic, carrots, and celery. Cook until the vegetables are softened.
- Add spareribs, crumbled sausage, ground beef, and ground pork to the pot. Brown the meats, breaking them apart with a spoon.
- Once the meats are browned, add the crushed tomatoes, diced tomatoes, tomato paste, red wine (if using), oregano, basil, salt, and pepper. Stir to combine.
- Bring the sauce to a simmer, then reduce the heat to low. Cover and let it simmer for at least 1-2 hours, stirring occasionally to allow the flavors to meld.
- While the sauce is simmering, prepare the meatballs using a mixture of ground pork, breadcrumbs, egg, herbs, salt, and pepper. Form small meatballs and add them to the sauce.
- Cook the spaghetti according to the package instructions.
- Once the sauce has thickened and the meatballs are cooked through, remove the spareribs bones and discard them.
- Serve the ragu over the cooked spaghetti. Garnish with grated Parmesan cheese.
