Slow cooker beef tips make for a delicious and easy-to-prepare meal. Here’s a basic recipe to get you started:
Ingredients:
- 2 pounds of beef stew meat or sirloin tips
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 cup beef broth
- 1/4 cup red wine (optional)
- 2 tablespoons Worcestershire sauce
- 2 tablespoons soy sauce
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- 2 cups sliced mushrooms (optional)
- 1/2 cup sour cream (for a creamy version, optional)
- Chopped fresh parsley for garnish (optional)
Instructions:
- In a large bowl, combine the flour, salt, and black pepper. Toss the beef tips in this mixture to coat them evenly.
- In a large skillet, heat the olive oil over medium-high heat. Add the coated beef tips and sear them until browned on all sides. This step adds flavor to the beef. You may need to do this in batches to avoid overcrowding the skillet.
- Place the seared beef tips in the slow cooker.
- In the same skillet, add the chopped onions and minced garlic. Sauté for a few minutes until they become fragrant and slightly translucent.
- Add the sautéed onions and garlic to the slow cooker with the beef.
- Pour in the beef broth, red wine (if using), Worcestershire sauce, soy sauce, tomato paste, dried thyme, and dried rosemary. Stir to combine all the ingredients.
- If you’re using mushrooms, add them to the slow cooker as well.
- Cover the slow cooker and cook on low heat for 6-8 hours or on high heat for 3-4 hours, or until the beef is tender and cooked to your liking.
- If you want a creamy sauce, stir in the sour cream during the last 30 minutes of cooking. Make sure to temper the sour cream first by adding a bit of the hot liquid from the slow cooker to it before mixing it in to prevent curdling.
- Taste and adjust the seasoning with salt and pepper as needed.
- Serve your slow cooker beef tips over cooked egg noodles, rice, or mashed potatoes. Garnish with chopped fresh parsley if desired.
This recipe can be customized to your taste by adding vegetables like carrots and peas or adjusting the seasonings. Enjoy your tender and flavorful slow cooker beef tips!
