Pasta with Butter Garlic Shrimp
Ingredients:
- For the shrimp:
- 1 lb shrimp, peeled and deveined
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
- Juice of 1 lemon
- 2 tablespoons fresh parsley, chopped
- For the pasta:
- 8 oz pasta (spaghetti, linguine, or fettuccine work well)
- 2 tablespoons olive oil
- Salt, to taste
- Grated Parmesan cheese, for serving
Instructions:
- Cook the pasta:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside. Toss with a little olive oil to prevent sticking.
- Prepare the shrimp:
- While the pasta is cooking, melt 2 tablespoons of butter in a large skillet over medium-high heat.
- Add the shrimp and season with salt, pepper, and red pepper flakes (if using).
- Cook until the shrimp turns pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
- Make the garlic butter sauce:
- In the same skillet, melt the remaining 2 tablespoons of butter.
- Add the minced garlic and cook until fragrant, about 1 minute.
- Pour in the lemon juice and stir to combine.
- Combine everything:
- Add the cooked pasta to the skillet and toss to coat in the garlic butter sauce.
- Return the shrimp to the skillet and toss to combine. Cook for another 1-2 minutes until everything is heated through.
- Stir in the chopped parsley.
- Serve:
- Divide the pasta and shrimp among plates.
- Sprinkle with grated Parmesan cheese and serve immediately.
