Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup buttermilk
- 1/4 cup milk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- Optional: 1 teaspoon vanilla extract
Instructions:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the buttermilk, milk, egg, melted butter, and vanilla extract if using.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined. It’s okay if there are a few lumps; overmixing can make the pancakes tough.
- Preheat a griddle or non-stick skillet over medium heat. Lightly grease with butter or cooking spray.
- Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface of the pancake and the edges look set, then flip and cook the other side until golden brown.
- Repeat with the remaining batter, adding more butter or cooking spray to the griddle as needed.
