Recipe for making classic meat pies. This recipe makes about 4 individual pies.
Ingredients:
For the Filling:
- 1 lb ground beef or a mix of beef and pork
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 cup frozen peas
- 2 tablespoons all-purpose flour
- 1 cup beef broth
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- Salt and pepper to taste
- Olive oil for cooking
For the Pie Crust:
- 2 1/2 cups all-purpose flour
- 1 cup (2 sticks) unsalted butter, cold and cubed
- 1/4 teaspoon salt
- 1/2 cup ice water
Instructions:
1. Prepare the Pie Crust:
- In a large bowl, combine the flour and salt.
- Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
- Gradually add the ice water, a few tablespoons at a time, and mix until the dough comes together. Be careful not to overmix.
- Divide the dough in half, shape each half into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
2. Make the Filling:
- In a large skillet, heat a bit of olive oil over medium heat. Add the chopped onions and cook until softened.
- Add the minced garlic and cook for an additional 1-2 minutes.
- Add the ground meat to the skillet and cook until browned.
- Stir in the diced carrots and frozen peas.
- Sprinkle the flour over the mixture and stir well to combine.
- Add the beef broth, tomato paste, and Worcestershire sauce. Stir until the mixture thickens.
- Season with salt and pepper to taste. Remove from heat and let the filling cool.
3. Assemble the Pies:
- Preheat your oven to 375°F (190°C).
- Roll out one disc of pie dough on a floured surface to your desired thickness.
- Line individual pie tins with the rolled-out dough.
- Fill each pie with the meat mixture.
- Roll out the second disc of dough and place it over the filling. Seal the edges by crimping with a fork or your fingers.
- Optionally, cut small slits on the top crust to allow steam to escape.
4. Bake:
- Place the pies on a baking sheet and bake in the preheated oven for about 25-30 minutes or until the crust is golden brown.
5. Serve:
- Allow the meat pies to cool for a few minutes before serving.
