Ingredients:
- 1/4 cup of dressing (your choice)
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumbers, chopped
- 1/2 cup bell peppers, chopped
- 1/4 cup red onion, thinly sliced
- 1/2 cup cooked quinoa or beans
- 1/2 cup shredded cheese or crumbled feta
- 1 cup mixed greens or spinach
Instructions:
- Start by pouring the dressing into the bottom of the mason jar.
- Layer the cherry tomatoes, cucumbers, bell peppers, and red onion on top of the dressing. This keeps the veggies crisp and fresh.
- Add the cooked quinoa or beans next.
