Here’s a simple and delicious recipe for Linguine with Mussels:
Ingredients:
- 1 pound (450g) linguine
- 2 pounds (900g) fresh mussels, cleaned and debearded
- 4 tablespoons olive oil
- 4 cloves garlic, thinly sliced
- 1/2 cup dry white wine
- 1 cup cherry tomatoes, halved
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper, to taste
- 1/4 cup fresh parsley, chopped
- Lemon wedges, for serving
Instructions:
- Cook the Linguine:
- Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until al dente. Drain and set aside.
- Prepare the Mussels:
- In a large, deep skillet or pot, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes (if using), and sauté until the garlic is fragrant but not browned, about 1-2 minutes.
- Cook the Mussels:
- Add the mussels to the skillet and pour in the white wine. Cover the skillet and let the mussels steam for about 5-7 minutes, or until they have opened. Discard any mussels that do not open.
- Add the Tomatoes:
- Add the halved cherry tomatoes to the skillet and cook for another 2-3 minutes until they are softened.
- Combine with Linguine:
- Add the cooked linguine to the skillet with the mussels and tomatoes. Toss everything together until the pasta is well coated with the sauce. Season with salt and black pepper to taste.
- Serve:
- Transfer the linguine and mussels to serving plates. Sprinkle with fresh parsley and serve with lemon wedges on the side.
Enjoy your meal!
