The magic of the Lemon Berry Ritz Icebox Cake lies in its perfect balance of flavors and textures. Each bite delivers a harmonious blend of tangy lemon curd, sweet and juicy berries, and the rich, creamy essence of homemade whipped cream.
Ingredients:
- 2 cups heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon zest
- 2 cups lemon curd (store-bought or homemade)
- 2 cups mixed berries (strawberries, blueberries, raspberries, etc.)
- 2 sleeves Ritz crackers
- Fresh mint leaves for garnish (optional)
Instructions:
- Prepare the Whipped Cream: In a large mixing bowl, combine the heavy cream, powdered sugar, vanilla extract, and lemon zest. Whip until stiff peaks form. Set aside.
- Assemble the Cake: In a 9×13-inch baking dish, spread a thin layer of lemon curd on the bottom. Arrange a layer of Ritz crackers over the curd, breaking some crackers if necessary to fill gaps.
- Layering: Spread a third of the whipped cream over the crackers, followed by a third of the remaining lemon curd. Sprinkle a layer of mixed berries on top. Repeat this process two more times, finishing with a layer of whipped cream and berries.
- Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the crackers to soften.
- Serve: Garnish with fresh mint leaves if desired. Slice and serve chilled.
