Jerk Shrimp Fettuccine Recipe
Ingredients:
For the Jerk Shrimp:
- 1 lb (450g) shrimp, peeled and deveined
- 1-2 tbsp jerk seasoning (store-bought or homemade)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 lime, juiced
For the Fettuccine:
- 8 oz (225g) fettuccine pasta
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Lime wedges (for serving)
Instructions:
1. Prepare the Shrimp:
- In a bowl, combine the shrimp, jerk seasoning, olive oil, minced garlic, and lime juice. Toss until the shrimp are well-coated.
- Let the shrimp marinate for at least 15-30 minutes for better flavor.
2. Cook the Fettuccine:
- Bring a large pot of salted water to a boil.
- Add the fettuccine and cook according to the package instructions until al dente.
- Drain the pasta and set aside.
3. Cook the Shrimp:
- Heat a large skillet over medium-high heat.
- Add the marinated shrimp in a single layer.
- Cook for about 2-3 minutes per side, or until the shrimp are pink and opaque.
- Remove the shrimp from the skillet and set aside.
4. Make the Sauce:
- In the same skillet, reduce the heat to medium.
- Add the butter and minced garlic, sauté for about 1 minute until fragrant.
- Pour in the heavy cream and bring to a simmer.
- Stir in the Parmesan cheese until melted and the sauce is smooth.
- Season with salt and pepper to taste.
5. Combine and Serve:
- Add the cooked fettuccine to the sauce, tossing to coat the pasta evenly.
- Return the cooked shrimp to the skillet and gently toss to combine.
- Garnish with fresh parsley and serve with lime wedges on the side.
