#### Ingredients:

– 1 lb (450g) sirloin steak, cut into 1-inch cubes
– 1 lb (450g) baby potatoes, halved or quartered if large
– 2 tablespoons olive oil
– 3 tablespoons unsalted butter, divided
– 4 cloves garlic, minced
– 1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)
– 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)
– Salt and black pepper to taste
– Fresh parsley, chopped, for garnish

– Red pepper flakes for a bit of heat
– Grated Parmesan cheese for garnish
#### Instructions:
1. **Prepare the potatoes:**
– In a large pot of salted boiling water, cook the potatoes until just tender, about 8-10 minutes. Drain and set aside.
2. **Cook the steak:**
– Season the steak cubes with salt and black pepper.
