Here’s a recipe for fried apple or peach pies:
Ingredients:
For the dough:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 2/3 cup shortening
- 6-8 tablespoons cold water
For the filling:
- 2 cups peeled and diced apples or peaches
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 2 tablespoons butter
- Oil for frying
For coating:
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions:
- Prepare the dough:
- In a mixing bowl, combine the flour and salt. Cut in the shortening until the mixture resembles coarse crumbs.
- Gradually add water, tossing with a fork until the dough forms a ball. Divide the dough in half, and wrap each portion in plastic wrap. Refrigerate for at least 30 minutes.
- Make the filling:
- In a saucepan, combine the diced apples or peaches, sugar, cinnamon, nutmeg, and lemon juice. Cook over medium heat until the fruit is tender, stirring occasionally, for about 10-15 minutes.
- Remove from heat and stir in the butter until melted. Allow the filling to cool completely.
- Assemble the pies:
- On a lightly floured surface, roll out one portion of the dough to about 1/8 inch thickness. Using a round cutter or a glass, cut out circles of dough.
- Place a spoonful of the cooled fruit filling onto the center of each dough circle.
- Moisten the edges of the dough with water, fold over, and press the edges together with a fork to seal. Repeat with remaining dough and filling.
- Fry the pies:
- In a deep skillet or pot, heat oil to 375°F (190°C).
- Carefully place the pies into the hot oil, a few at a time, depending on the size of your skillet. Fry until golden brown on both sides, about 2-3 minutes per side.
- Remove the pies from the oil using a slotted spoon and drain on paper towels.
- Coat the pies:
- In a shallow dish, combine the sugar and cinnamon for coating.
- While the pies are still warm, roll them in the cinnamon-sugar mixture until coated evenly.
- Serve:
- Serve the fried apple or peach pies warm as a delicious dessert or snack. Enjoy!
These fried pies are best enjoyed fresh but can be stored in an airtight container at room temperature for a day or two. Reheat them in the oven for a few minutes before serving if desired.
