- 2 cups cooked chicken, shredded or diced
- 2 tablespoons butter
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper (optional)
- 2 cloves garlic, minced
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 cup chicken broth
- 1/2 cup heavy cream or milk
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- Chopped parsley for garnish (optional)
Instructions:
- Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish or a similarly sized casserole dish.
- Cook the spaghetti according to the package instructions until al dente. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the chopped onion and bell pepper (if using), and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.
- Stir in the cooked chicken, cream of mushroom soup, chicken broth, and heavy cream (or milk). Season with salt and pepper to taste. Let the mixture simmer for a few minutes until it’s heated through and slightly thickened.
- Add the cooked spaghetti to the skillet and toss everything together until well combined.
- Transfer the mixture to the prepared baking dish and spread it out evenly. Sprinkle the shredded cheese on top, followed by the grated Parmesan cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly and the edges are golden brown.
- Once done, remove from the oven and let it cool for a few minutes before serving. Garnish with chopped parsley if desired.
