Deluxe Potato Beef Roll Recipe
Ingredients:
- For the Potato Layer:
- 4 large potatoes, peeled and boiled
- 2 tablespoons butter
- 1/2 cup milk
- Salt and pepper to taste
- For the Beef Filling:
- 1 pound ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, finely chopped
- 1 cup mushrooms, sliced
- 1 cup frozen peas and carrots mix
- 1 can (14.5 ounces) diced tomatoes, drained
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- For Assembly:
- 1 egg, beaten
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Potato Layer:
- Boil the potatoes until they are tender, about 15-20 minutes.
- Drain the potatoes and mash them with butter and milk until smooth.
- Season with salt and pepper to taste. Set aside to cool slightly.
- Prepare the Beef Filling:
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the chopped onion, garlic, bell pepper, and mushrooms to the skillet. Cook until the vegetables are tender, about 5-7 minutes.
- Stir in the peas and carrots, diced tomatoes, and tomato paste.
- Season with oregano, basil, salt, and pepper. Let the mixture simmer for about 10 minutes, stirring occasionally. Remove from heat and let it cool slightly.
- Assemble the Roll:
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- On a large piece of parchment paper, spread the mashed potatoes into a rectangular shape about 1/2 inch thick.
- Spread the beef mixture evenly over the potato layer, leaving about a 1-inch border around the edges.
- Sprinkle the shredded cheddar cheese over the beef mixture.
- Carefully roll the potato layer into a log, using the parchment paper to help guide and lift it. Seal the edges and ends to encase the filling.
- Transfer the roll to the prepared baking sheet. Brush the top and sides with the beaten egg.
- Bake:
- Bake in the preheated oven for 25-30 minutes, or until the roll is golden brown and heated through.
- Let the roll rest for 5-10 minutes before slicing.
- Serve:
- Garnish with chopped fresh parsley.
- Slice the roll and serve hot with a side salad or steamed vegetables.
