Ingredients:
- 2 cups of whole milk
- 1 cup of heavy cream
- 1/2 cup of granulated sugar
- 4 large egg yolks
- 2 teaspoons of pure vanilla extract
- Pinch of salt
Instructions:
- In a medium saucepan, combine the whole milk and heavy cream. Heat the mixture over medium heat until it’s just about to simmer. Remove it from the heat.
- In a separate bowl, whisk together the egg yolks and granulated sugar until it’s pale and slightly thickened.
- Slowly pour the warm milk and cream mixture into the egg yolks while whisking continuously to prevent curdling.
- Once combined, return the mixture to the saucepan and place it back on the stove over medium heat. Cook, stirring constantly, until the mixture thickens and coats the back of a spoon. This usually takes about 5-7 minutes. Do not let it boil.
- Once thickened, remove the saucepan from the heat and stir in the vanilla extract and a pinch of salt.
- Strain the mixture through a fine-mesh sieve into a clean bowl to remove any lumps.
- Let the mixture cool to room temperature, then cover it and refrigerate for at least 4 hours or until chilled.
- Once chilled, transfer the mixture to an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- Transfer the churned ice cream to a freezer-safe container and freeze for an additional 2-4 hours, or until it’s firm enough to scoop.
