Christmas Style Steak Posole with Homemade Tortillas
Ingredients:
For the Posole:
- 1.5 lbs steak (chuck or flank), cut into bite-sized pieces
- 1 onion, diced
- 4 cloves garlic, minced
- 1 can hominy (28 oz), drained and rinsed
- 4 cups beef broth
- 2 cups water
- 2 tbsp red chili powder
- 1 tbsp green chili powder
- 2 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- 2 tbsp olive oil
- Garnishes: Sliced radishes, chopped cilantro, lime wedges, diced avocado, shredded cabbage
For the Homemade Tortillas:
- 2 cups masa harina
- 1 ¼ cups warm water
- ¼ tsp salt
Instructions:
Steak Posole:
- Brown the Steak: Heat olive oil in a large pot over medium-high heat. Add the steak pieces, seasoning with salt and pepper. Sear the meat until browned on all sides. Remove the steak from the pot and set aside.
- Sauté Onions and Garlic: In the same pot, add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
- Add Seasonings: Stir in the red and green chili powders, cumin, and oregano, cooking for about 2 minutes to let the spices bloom.
- Combine Ingredients: Return the browned steak to the pot. Add the beef broth, water, and hominy. Stir everything together, scraping up any browned bits from the bottom of the pot.
- Simmer: Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for 1.5 to 2 hours, or until the steak is tender and the flavors have melded together.
- Adjust Seasoning: Taste the posole and adjust the salt, pepper, or chili powders to your liking.
Homemade Tortillas:
- Prepare the Dough: In a large bowl, combine the masa harina and salt. Slowly add the warm water, mixing with your hands until a dough forms. The dough should be moist but not sticky. If it’s too dry, add a bit more water.
- Divide and Roll: Divide the dough into 12 equal portions and roll each into a ball. Cover with a damp cloth to keep the dough from drying out.
- Press and Cook: Using a tortilla press or rolling pin, flatten each ball into a thin tortilla. Heat a dry skillet or griddle over medium-high heat. Cook each tortilla for about 1 minute on each side or until they have brown spots and puff slightly.
- Keep Warm: Place cooked tortillas in a clean towel to keep them warm and soft until ready to serve.
Serving:
Ladle the Christmas-style steak posole into bowls and top with your favorite garnishes. Serve with warm homemade tortillas on the side for a festive and hearty meal that brings holiday cheer to the table!
