Ingredients:
- 2 cups cooked chicken, diced
- 1 cup carrots, diced
- 1 cup frozen peas
- 1/2 cup butter
- 1/3 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon celery seed
- 1/4 teaspoon onion powder
- 1 3/4 cups chicken broth
- 2/3 cup milk
- 2 pre-made pie crusts (for top and bottom)
Instructions:
- Preheat your oven to 425°F (220°C).
- In a large saucepan, melt the butter over medium heat. Stir in the flour, salt, pepper, celery seed, and onion powder until well combined.
- Gradually whisk in the chicken broth and milk. Cook and stir the mixture until it thickens and becomes smooth.
- Add the diced chicken, carrots, and peas to the sauce. Stir until all the ingredients are well coated and heated through. Remove the saucepan from the heat.
- Roll out one pie crust and place it into a pie dish. Pour the chicken and vegetable mixture into the crust.
- Roll out the second pie crust and place it over the filling. Seal the edges of the crusts together, and cut slits in the top crust to allow steam to escape.
- Bake in the preheated oven for about 30-35 minutes or until the crust is golden brown.
- Allow the chicken potpie to cool for a few minutes before serving.
