recipe for cheezy pasta with fried lion’s mane mushrooms and asparagus:
Ingredients:
- 8 oz pasta of your choice
- 1 lb lion’s mane mushrooms, cleaned and sliced
- 1 bunch of asparagus, trimmed and cut into bite-sized pieces
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup shredded cheese (cheddar, mozzarella, or your favorite melting cheese)
- Salt and pepper to taste

- In the same skillet, add another tablespoon of olive oil. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
- Add the asparagus to the skillet and cook until they are tender-crisp, about 3-5 minutes. Season with salt and pepper.
- Add the cooked pasta to the skillet with the asparagus and garlic. Toss everything together.
- Sprinkle the shredded cheese over the pasta and stir until the cheese is melted and coats the pasta evenly.
- Finally, add the fried lion’s mane mushrooms back to the skillet and toss everything together.
- Optional: sprinkle red pepper flakes for some extra heat.
