Ingredients:
- 2 cups cooked chicken, shredded (rotisserie chicken works great)
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 1/2 tsp dried parsley (optional)
- 1 can (7.5 oz) refrigerated biscuit dough, cut into quarters
- 1 tbsp butter, melted
Instructions:
- Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a large bowl, combine the shredded chicken, cream of chicken soup, sour cream, cheddar cheese, milk, garlic powder, onion powder, black pepper, and dried parsley (if using). Mix well until everything is well incorporated.
- Add the biscuit pieces into the chicken mixture and stir until the biscuits are evenly coated.
- Pour the mixture into the prepared baking dish, spreading it out evenly.
- Drizzle the melted butter over the top of the casserole to help the biscuits brown nicely.
- Bake in the preheated oven for 30 minutes, or until the biscuits are golden and cooked through, and the casserole is bubbly.
- Sprinkle the mozzarella cheese over the top of the casserole and return it to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving. Garnish with extra parsley if desired.
