Cajun Shrimp Scampi is a flavorful and spicy twist on the classic shrimp scampi dish. Here’s a simple recipe for you to try:
Ingredients:
- 1 pound large shrimp, peeled and deveined
- 8 oz linguine or spaghetti
- 4 tablespoons unsalted butter
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon Cajun seasoning (adjust to taste)
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1/2 cup chicken broth
- 1/4 cup dry white wine (optional)
- Juice of 1 lemon
- Salt and black pepper to taste
- Chopped fresh parsley for garnish
- Grated Parmesan cheese (optional)
Instructions:
- Cook the pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat.
- Add the shrimp to the skillet and cook for 1-2 minutes on each side, until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of butter and 2 tablespoons of olive oil.
- Add the minced garlic, Cajun seasoning, and red pepper flakes. Sauté for about 1 minute until the garlic becomes fragrant, being careful not to burn it.
- Pour in the chicken broth and white wine (if using), scraping any browned bits from the bottom of the skillet with a spoon.
- Stir in the cooked shrimp and let them heat through in the sauce for a couple of minutes.
- Squeeze the lemon juice over the shrimp and sauce. Season with salt and black pepper to taste.
- Add the cooked pasta to the skillet, tossing everything together to coat the pasta in the flavorful sauce.
- Garnish with chopped parsley and, if desired, grated Parmesan cheese.
