Baked Chile Rellenos are a delicious and healthier alternative to the traditional fried version. Here’s a simple recipe you can try:
Ingredients:
- 6 large poblano peppers
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 1 cup corn kernels (fresh or frozen)
- 1 cup black beans, drained and rinsed
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 can (14.5 oz) diced tomatoes, drained
Instructions:
- Prepare the Peppers:
- Preheat your oven to 400°F (200°C).
- Place the poblano peppers on a baking sheet and roast them in the oven for about 15-20 minutes, turning occasionally, until the skins are charred and blistered.
- Remove the peppers from the oven and transfer them to a bowl. Cover the bowl with plastic wrap and let the peppers steam for about 10 minutes. This will make it easier to remove the skins.
- Prepare the Filling:
- While the peppers are steaming, heat the olive oil in a skillet over medium heat. Add the chopped onion and garlic and sauté until softened, about 3-4 minutes.
- Add the corn, black beans, diced tomatoes, ground cumin, chili powder, salt, and pepper to the skillet. Cook for another 5 minutes, stirring occasionally. Remove from heat and let cool slightly.
- Once cooled, stir in the shredded Monterey Jack and cheddar cheese until well combined.
- Stuff the Peppers:
- Carefully peel the skins off the roasted poblanos. Make a small slit along one side of each pepper and carefully remove the seeds and membranes, leaving the stem intact.
- Stuff each pepper with the cheese and vegetable filling, being careful not to overfill.
- Bake:
- Place the stuffed peppers back on the baking sheet and bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
- Serve:
- Once baked, remove the peppers from the oven and let them cool for a few minutes before serving. You can garnish them with chopped cilantro, sliced avocado, sour cream, or your favorite salsa.
Enjoy your delicious baked Chile Rellenos! They make a fantastic main dish or even a tasty appetizer for a Mexican-themed meal.
