Ingredients:
- 8 ounces Pancit Canton noodles (or any other egg noodles)
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 small onion, chopped
- 1/2 cup sliced pork or chicken (or both)
- 1/2 cup peeled and deveined shrimp
- 1/2 cup sliced Chinese sausage (optional)
- 1 cup mixed vegetables (such as carrots, bell peppers, snow peas, and cabbage), thinly sliced
- 2 cups chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- Salt and pepper to taste
- Calamansi or lemon wedges for garnish
Instructions:
- Cook the Pancit Canton noodles according to the package instructions. Drain and set them aside.
- In a large wok or skillet, heat the vegetable oil over medium-high heat.
- Sauté the minced garlic and chopped onion until fragrant and the onion becomes translucent.
- Add the sliced pork, chicken, shrimp, and Chinese sausage (if using). Cook until the meat is no longer pink and the shrimp turn pink.
- Add the mixed vegetables to the wok and stir-fry for a few minutes until they start to soften.
- Push the meat and vegetables to one side of the wok and add the cooked Pancit Canton noodles to the other side.
- Pour the chicken broth, soy sauce, and oyster sauce over the noodles. Gently toss the noodles and sauce together with the meat and vegetables. Stir-fry until everything is well combined and the noodles have absorbed the flavors.
- Season with salt and pepper to taste. Adjust the seasoning as needed.
- Continue to stir-fry until the noodles are heated through and slightly crispy at the edges.
- Transfer the Pancit Canton to a serving platter and garnish with calamansi or lemon wedges.
