Instructions
- Prepare the Beef Mixture
Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until softened and translucent, about 3–4 minutes. Add the ground beef, breaking it up with a wooden spoon, and cook until browned, about 6–8 minutes. Stir in the minced garlic and taco seasoning, cooking for another 1–2 minutes until fragrant. Season with kosher salt to taste, then remove the skillet from the heat and set aside. - Prepare the Refried Beans
In a small saucepan, combine the refried beans and 1/4 cup water over low heat. Stir occasionally until the beans are warmed through and have a spreadable consistency. Remove from heat. - Assemble the Nachos
Preheat your oven to 375°F (190°C). On a large baking sheet or oven-safe platter, spread a layer of tortilla chips. Spoon half of the refried beans over the chips, followed by half of the cooked beef mixture. Sprinkle half of the shredded cheddar and Monterey Jack cheeses over the top. Add a second layer of tortilla chips and repeat with the remaining beans, beef, and cheeses. Scatter the drained black beans and pickled jalapeños over the top. - Bake the Nachos
Transfer the baking sheet to the preheated oven and bake for 10–15 minutes, or until the cheese is fully melted and bubbling. Keep an eye on it to prevent the chips from burning. - Add the Toppings
Remove the nachos from the oven and let them cool for 2–3 minutes. Top with diced tomato, avocado, green onions, and fresh cilantro leaves if using. Drizzle with sour cream and hot sauce for added flavor. Serve immediately and enjoy!
