Sausage and Peppers Recipe
Ingredients:
- 4 Italian sausages (sweet or hot, depending on preference)
- 2 tablespoons olive oil
- 1 large onion, thinly sliced
- 3 bell peppers (red, green, yellow), thinly sliced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes (optional)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste

- Hoagie rolls or crusty bread (optional)
Instructions:
- Prepare the Sausages:
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the sausages and cook until browned on all sides, about 5-7 minutes. Remove sausages from the skillet and set aside.
- Cook the Vegetables:
- In the same skillet, add the remaining tablespoon of olive oil.
- Add the sliced onion and bell peppers. Sauté until they start to soften, about 5 minutes.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Combine and Simmer:
- If using diced tomatoes, add them to the skillet along with the oregano, basil, salt, and pepper. Stir to combine.
- Return the sausages to the skillet, nestling them among the vegetables.
- Lower the heat to medium-low, cover, and simmer for 20-25 minutes, until the sausages are cooked through and the vegetables are tender.
- Serve:
- If desired, serve the sausage and peppers in hoagie rolls or with crusty bread on the side.
- Garnish with fresh basil or parsley for added flavor and color.
