- 1 large potato, peeled and diced
- 1 cup broccoli florets
- 2 cups fresh spinach, chopped
- 6 cups homemade stock (chicken or vegetable)

- Salt and pepper to taste
- Olive oil
- Grated Parmesan cheese (optional, for serving)
Instructions:
- In a large pot, heat a drizzle of olive oil over medium heat. Add the Italian sausage, breaking it up with a wooden spoon, and cook until browned and cooked through, about 5-7 minutes.
- Add the diced potato to the pot and cook for another 5 minutes, allowing the potatoes to slightly soften.
- Pour in the homemade stock and bring the mixture to a simmer. Let it cook for about 10-15 minutes or until the potatoes are tender.
