Recipe for Tuccu with sausages:
Ingredients:
- 2 cups dried broad beans (fava beans), soaked overnight and drained
- 4 Italian sausages, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 cup chicken or vegetable broth
- Grated Parmesan cheese for serving (optional)
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and cook until softened, about 5 minutes.
- Add the sliced sausages to the pot and cook until browned on all sides, about 8-10 minutes.
- Stir in the soaked and drained broad beans, dried oregano, dried basil, salt, and pepper. Cook for another 5 minutes, stirring occasionally.
- Pour in the chicken or vegetable broth, and bring the mixture to a simmer. Reduce the heat to low, cover the pot, and let it cook for about 45 minutes to 1 hour, or until the beans are tender and cooked through. Stir occasionally and add more broth if needed to prevent sticking.
- Once the beans are cooked, use a potato masher or the back of a fork to mash some of the beans, leaving some whole for texture.
- Taste and adjust the seasoning if needed. Serve hot, garnished with grated Parmesan cheese if desired.
