Ingredients:
For the Pasta Dough:
- 2 cups all-purpose flour
- 3 large eggs
- 1/2 teaspoon salt
For the Filling:
- 1 cup ricotta cheese
- 1 cup cooked and chopped spinach (squeeze out excess water)
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste

- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced

Instructions:
1. Make the Pasta Dough:
- Place the flour on a clean surface and make a well in the center.
- Crack the eggs into the well and add salt.
- Using a fork, gradually incorporate the flour into the eggs until a dough forms.
- Knead the dough for about 10 minutes until it becomes smooth.
- Wrap the dough in plastic wrap and let it rest for at least 30 minutes.
2. Prepare the Filling:
- In a bowl, combine the ricotta, chopped spinach, Parmesan cheese, salt, pepper, and any optional ingredients.
- Mix well until the filling is evenly combined.
3. Roll out the Pasta Dough:
- Divide the rested dough into smaller portions.
- Roll out each portion into thin sheets using a rolling pin or pasta machine.
4. Assemble the Ravioli:
- Place small portions of the filling onto one sheet of pasta, leaving space between each portion.
- Lay another sheet of pasta over the filling.
- Press around each portion of filling to seal the edges.
- Use a knife or a ravioli cutter to cut out individual ravioli.
5. Cook the Ravioli:
- Bring a large pot of salted water to a boil.
- Cook the ravioli for 2-3 minutes or until they float to the surface.
