Ingredients:
For the Crust:
- 1 1/2 cups graham cracker crumbs

- 2 tablespoons sugar

Instructions:
1. Prepare the Crust:
- In a bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated with butter.
- Press the crumb mixture into the bottom of each jar to create the crust.
2. Make the Cheesecake Filling:
- In a mixing bowl, beat the cream cheese until smooth.
- Add sugar and vanilla extract, and continue to beat until well combined.
- Add eggs one at a time, beating well after each addition.
- Finally, fold in the sour cream until the mixture is smooth.
3. Assemble the Jars:
- Spoon the cheesecake filling over the crust in each jar, leaving some space at the top for the cherry topping.
- Smooth the tops with a spatula.
4. Bake (Optional):
- You can either bake the jars in a water bath in the oven for about 20-25 minutes at 325°F (160°C) or refrigerate them for a few hours until set. Baking will give the cheesecake a slightly firmer texture.
5. Add the Cherry Topping:
- Once the cheesecake has set, spoon cherry pie filling on top of each jar.
6. Serve or Chill:
- Serve the cherry cheesecake jars immediately or refrigerate them until ready to serve.
