Ingredients:
- 1 pound ground beef (or ground turkey)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 can (15 ounces) diced tomatoes, drained
- 1 cup salsa
- 1 cup sour cream
- 2 cups shredded Mexican blend cheese
- 12 small corn or flour tortillas
- Fresh cilantro, chopped (for garnish)
- Green onions, sliced (for garnish)
- Avocado slices (for garnish)
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium-high heat until browned. Add chopped onions and minced garlic, and cook until the onions are softened.
- Drain any excess fat from the skillet, then add the taco seasoning, black beans, corn, diced tomatoes, and salsa. Mix well and let it simmer for about 5-7 minutes.
- In a separate bowl, mix together the sour cream and 1 cup of shredded cheese.
- In a baking dish, layer the ingredients as follows:
- Place a few spoonfuls of the meat mixture on the bottom of the dish.
- Layer with tortillas to cover the bottom.
- Spread half of the sour cream and cheese mixture over the tortillas.
- Add a layer of the meat mixture.
- Repeat the layers, finishing with a layer of tortillas on top.
- Sprinkle the remaining shredded cheese on top.
- Bake in the preheated oven for about 25-30 minutes or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
- Garnish with chopped cilantro, sliced green onions, and avocado slices.
- Serve slices of Mexican Taco Lasagna with your favorite toppings, such as additional salsa, guacamole, or a dollop of sour cream.
