Instructions:
Making Passatelli:
- In a large mixing bowl, combine the fresh breadcrumbs, grated Parmesan cheese, lemon zest, salt, and nutmeg (if using).
- Create a well in the center of the dry ingredients and crack the eggs into it.
- Using a fork or your hands, gradually incorporate the eggs into the dry ingredients, mixing until a firm dough forms. Knead the dough for a few minutes until it becomes smooth.
- Let the dough rest for about 15-30 minutes, covered with a kitchen towel.
- After resting, shape the dough into cylindrical pieces about the thickness of a pencil.
- Using a passatelli maker or a potato ricer with large holes, press the dough through the holes, cutting it into shorter lengths as it comes out. Alternatively, you can roll the dough into small cylinders by hand.

- Bring a large pot of salted water to a gentle simmer. Drop the passatelli into the water and cook for about 1-2 minutes or until they float to the surface.
- Use a slotted spoon to transfer the passatelli to a plate or bowl.
