Ingredients:
- 8 oz (about 225g) of your favorite pasta (linguine, fettuccine, or spaghetti work well)
- 1 pound (about 450g) mixed seafood (shrimp, scallops, mussels, and/or clams), cleaned and deveined
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 cup chicken or seafood broth
- 1/2 cup dry white wine
- Juice of half a lemon
- Salt and pepper to taste
- Crushed red pepper flakes (optional, for a bit of heat)
- Fresh parsley, chopped, for garnish
Instructions:
- Cook the pasta: Boil a large pot of salted water and cook the pasta according to the package instructions until al dente. Drain and set aside.
- Prepare the seafood: In a large skillet or pan, melt 2 tablespoons of butter over medium-high heat. Add the mixed seafood and sauté until just cooked through. This should only take a few minutes, as overcooking can result in rubbery seafood. Remove the cooked seafood from the pan and set aside.
- Make the garlic butter sauce: In the same pan, add the remaining 2 tablespoons of butter. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it. If you like a bit of heat, you can add a pinch of crushed red pepper flakes.
- Deglaze the pan: Pour in the white wine and chicken or seafood broth, scraping any browned bits from the bottom of the pan. Allow the liquid to simmer and reduce by half.
- Combine everything: Add the cooked seafood back to the pan, along with the cooked pasta. Toss everything together to coat the pasta and seafood in the garlic butter sauce. Squeeze the lemon juice over the mixture and season with salt and pepper to taste.
- Serve: Garnish the seafood pasta with chopped fresh parsley and serve immediately. You can also add a bit of grated Parmesan cheese if desired.
