Ingredients:
- 4 large onions, thinly sliced
- 3 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 2 cloves garlic, minced
- 1/2 cup dry white wine (optional)
- 8 cups beef broth
- 2 bay leaves
- 1 teaspoon dried thyme

- Baguette slices
- Gruyere or Swiss cheese, grated
Instructions:
- In a large soup pot, melt the butter and olive oil over medium heat.
- Add the sliced onions to the pot and cook slowly, stirring occasionally, until the onions are caramelized and golden brown. This process may take about 30-40 minutes.
- Sprinkle sugar over the caramelized onions to help with the browning process and continue to cook for an additional 5 minutes.
- Add minced garlic to the pot and sauté for about 1-2 minutes until fragrant.
- If using wine, pour it into the pot to deglaze, scraping up any browned bits from the bottom.
